Vineyard: Montagna Grande, Trapani. The vineyards are situated at 400 metres above sea level, on limestone soil. The vines are Guyot-trained.
Harvest and Vinification: Hand-harvested. Macerated on the skins for approximately 15 days. Aged for six months in amphora, followed by four months in stainless steel.
SENSORY PROFILE
Nose: Orange peel, dried apricot, Mediterranean herbs, black tea and delicate spices.
Palate: Structured and savoury, with fine, well-integrated tannins.
Finish: Long, persistent and distinctly mineral.
Identity: A deep and structured skin-contact Catarratto whose aromatic richness is balanced by savouriness, fine tannins and mineral tension.
Food Pairings: Asian cuisine, white meats, tuna and aged cheeses.
Serving Temperature: 12–14°C.
Ageing Potential: 8–10 years.

Harvested in mid-September, gently pressed and cold-fermented at 13°C for 15 days, then aged for four months in concrete tanks.
An exceptionally versatile white wine that pairs well with a wide variety of dishes. Its classic notes of tropical fruit and bitter almond make it an excellent match for notoriously difficult ingredients such as artichokes and asparagus.
THE GRAPE VARIETY AND TERROIR
TRAPANI・SICILIA・ITALIA
Catarratto is one of Sicily’s most important indigenous grape varieties and the most widely planted on the island. It is used in many Sicilian white wines, producing approachable wines with excellent texture.
We cultivate the less common Catarratto Bianco Lucido biotype, renowned for producing elegant, high-quality wines with complexity, vibrant acidity and appealing minerality. Our vineyards on Montagna Grande face north and east and lie more than 400 metres above sea level, on pure limestone bedrock covered by a very thin, nutrient-poor layer of topsoil.
